Streaky Beef Mac & Cheese

A quick one-pan macaroni in a paprika-spiced butter and milk sauce, finished with melted Perfect Italiano Mozzarella and crumbled crispy streaky beef.

  • 1 tbsp (15g) Anchor Butter
  • 1 tbsp (10g) plain flour
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 200ml evaporated milk
  • 2-3 slices streaky beef
  • 120g macaroni
  • 80-100g Perfect Italiano Mozzarella

Method

    Boil the macaroni: bring a pot of water to the boil, add a pinch of salt and cook the macaroni for 7-9 minutes until tender. Drain and set aside.

    Fry the streaky beef: heat a little oil (or just use the fat from the beef) and fry 2-3 slices of streaky beef over medium heat until fully cooked and slightly crispy at the edges. Remove, cut into small pieces or roughly crumble, and set aside. You can keep a little of the beef fat in the pan to flavour the sauce.

    Make the sauce: melt 1 tbsp Anchor Butter in the pan over low-medium heat. Add the flour and stir for about 1 minute. Pour in the evaporated milk a little at a time, stirring so no lumps form, and cook until the sauce starts to thicken.

    Season with paprika, black pepper, salt, sugar, onion powder and garlic powder. Stir and taste, adding more salt if needed.

    Lower the heat and add the Perfect Italiano Mozzarella. Stir until the cheese melts and the sauce turns creamy.

    Add the cooked macaroni and the fried streaky beef. Toss for 1-2 minutes until everything is coated in the sauce, and serve.
