Serunding Lasagna
A Malaysian twist on lasagna: homemade shredded-meat serunding with coconut milk and tamarind, layered with pasta sheets and Perfect Italiano Perfect Bakes, then finished with Perfect Italiano Parmesan.

- 6-8 dried lasagna sheets
- 150g Perfect Italiano Perfect Bakes
- Anchor Butter Unsalted, for greasing
- 100g Perfect Italiano Parmesan
- 800g beef, boiled and finely shredded
- 1 cup coconut milk
- 1/4 cup tamarind juice
- 1 tbsp kerisik (toasted grated coconut)
- 1 piece gula melaka (palm sugar)
- Salt, to taste
- 10 dried chillies, washed and boiled
- 8 shallots
- 4 cloves garlic
- 1 inch ginger
- 1 inch galangal
- 1 tbsp coriander seeds
- 1 tsp fennel seeds
- 1 tsp cumin seeds
- 2 tbsp cooking oil

Make the serunding: blend the dried chillies, shallots, garlic, ginger, galangal, coriander, fennel and cumin into a fine paste. Heat 2 tbsp oil in a wok and saute the paste until fragrant and the oil separates. Add the coconut milk, shredded beef, kerisik, gula melaka, tamarind juice and salt to taste. Simmer, stirring constantly so it does not burn, until everything is cooked through and fairly dry but not completely dried out. Cool slightly.

Grease an ovenproof dish evenly with Anchor Butter Unsalted. Spread a ladleful of serunding over the base, sprinkle with Perfect Italiano Perfect Bakes and lay 1-2 dried lasagna sheets on top.

Repeat the layers until all the ingredients are used up, finishing with the remaining Perfect Italiano Perfect Bakes on top. Cover the dish with aluminium foil and bake in an oven preheated to 180-190C for 25 minutes.

Remove the foil, sprinkle over more Perfect Italiano Perfect Bakes and bake for a further 10 minutes, or until the cheese is golden brown.

Remove from the oven and dust with Perfect Italiano Parmesan while still hot.
