One-Pot Shakshuka
A one-pan shakshuka with a smoky, spiced tomato base, baby spinach and softly cooked eggs, topped with Perfect Italiano Perfect Bakes and served with garlic toast for dipping.

- 1 tbsp cooking oil
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1 red capsicum, diced
- 3 tomatoes, diced
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin powder
- 1/2 tsp chilli flakes
- 1 tsp paprika powder
- Salt or seasoning to taste
- A handful of baby spinach
- A little water
- 3 eggs
- Black pepper to taste
- Dried parsley, to garnish
- 80g Perfect Italiano Perfect Bakes
- Garlic toast or bread, to serve
Step by step
Method

Heat the oil in a pan and saute the onion and garlic until soft, then add the capsicum and cook for 2 minutes.

Add the diced tomatoes, cayenne, cumin, chilli flakes, paprika and salt. Add a splash of water and simmer for 5-8 minutes until the sauce thickens.

Stir in the baby spinach and let it wilt.

Make wells in the sauce and crack in the eggs. Cover and cook on low for 4-5 minutes until the whites are set.

Sprinkle Perfect Italiano Perfect Bakes over the top, cover again and let it melt.

Finish with black pepper and dried parsley and serve with garlic toast.
