Crispy Parmesan Fingers
A simple yeasted olive-oil dough is kneaded with Perfect Italiano Parmesan, cut into fingers and baked until crisp and golden, then showered with more Perfect Italiano Parmesan.

- 250g plain flour
- 150ml warm water
- 200g Perfect Italiano Parmesan
- 7g dried yeast
- 1/2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp sugar
Step by step
Method

Stir the dried yeast and sugar into 50ml of the warm water and leave for 3-4 minutes until foamy.

Put the flour and salt in the bowl of a stand mixer. Add the olive oil and the yeast mixture and knead slowly. Gradually pour in the remaining warm water and continue kneading for a few minutes.

Add most of the Perfect Italiano Parmesan (reserve some for topping) and knead until the dough no longer sticks to the mixer.

Turn the dough into a lightly floured bowl, cover with cling film and rest for 10 minutes or until slightly risen.

Roll the dough out on a floured board to your desired thickness and cut into long finger-shaped strips.

Arrange the strips on a baking tray lined with parchment paper and bake in an oven preheated to 190-200C for 8-10 minutes, or until golden brown.

Remove from the oven and sprinkle the remaining Perfect Italiano Parmesan over the hot fingers.
